Vegan Hamantaschen that Melts in your Mouth

Happy Purim, or as we say, chag Purim sameach! Purim is a holiday celebrating the outsmarting and successful defeat of Haman, a Persian Empire official who planned to massacre all of the Jewish people in ancient Persia. The classic Ashkenazi hamantaschen I grew up eating were filled with sweet poppy-seed paste or fruit jam like plum, fig and a more modern adaptation includes chocolate.

Here is my vegan version the classic sweet poppy-seed-filled recipe that is melt-in-your-mouth good! Feel free to add your own fillings as well like vegan chocolate chips, plum or fig jam.

WHAT YOU’LL NEED:

  • 3 cups all purpose flour

  • 3/4 cup almond flour/meal

  • 1 cup powdered sugar

  • 1/4 cup brown sugar

  • 1 tsp baking powder

  • 8 oz. vegan butter

  • 1/2 cup liquid vegan egg (Just Egg)

    *if vegan butter is unsalted, add 1/2 tsp of salt


POPPY SEED FILLING:

  • 1/2 cup poppy seeds

  • 1/3 cup date syrup (maple or agave will work too)

  • 3 tbsp agave or vegan honee

  • 1.5 cups nondairy milk

  • 2 tbsp agave nectar

    POPPY DIRECTIONS:

    • Pulverize the poppy seeds using a coffee bean grinder. You can also leave whole if you do not have this.

    • In a large skillet, over medium heat, combine all the ingredients, stirring occasionally for about 15 minutes until thick. Set aside in a bowl.

DIRECTIONS:

  1. Preheat oven to 400°F

  2. Combine and sift the flour and almond flour/meal and set aside.

  3. In a mixer. whisk the vegan butter, powdered sugar, brown sugar until smooth.

  4. Add the vegan egg to the mixer and continue to beat.

  5. Switch to a paddle mixer attachment and add the baking powder , pinch of salt (if required) and the flours 1/4 cup at a time, constantly mixing on low speed.

  6. Once a dough is formed, cover in plastic and refrigerate for 2-3 hours (or overnight).

  7. Once chilled, roll out to about 1/4” thick on a floured surface.

  8. Cut into circles (you can use a large mug or cup for shape.

  9. Put about 1 tbsp of filling in the center, and gently roll up three sides, pinching the corners.

  10. Place on a parchment-lined baking sheet and bake at 400ºF for 11-12 minutes.

  11. Let cool, garnish with powdered sugar and enjoy!
