It all started when I was innocently making some sunflower-butter, chocolate chip cookies (based mostly on a recipe from Veganomicon, of course). I let them cool off, packed them into a box and, that evening, when my friends and I bit into them… GREEN! I thought we were goners for sure. We would certainly die from some overlooked poison I probably spilled into the dough, but after some quick research, we realized that it was just pesky, old science working its green magic. Chlorogenic acid (which is super healthy) is in sunflower seeds and it turns green with baking soda. So next time you need to make green cookies and don’t want to use food coloring, remember this trick!
